1 can (15 oz) fruit cocktail with syrup
2 cups all-purpose flour
1 ½ cups granulated sugar
1 tsp baking powder
½ tsp baking soda
½ tsp salt
3 large eggs
½ cup unsalted butter, melted
1 tsp vanilla extract
Optional: ½ cup chopped pecans or shredded coconut

Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
In another bowl, beat eggs, then add melted butter, vanilla extract, and the entire can of fruit cocktail (including syrup). Stir gently.
Add the wet ingredients to the dry ingredients. Mix just until combined. Fold in nuts or coconut if using.
Pour batter into prepared pan and spread evenly.
Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
Allow cake to cool in pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
