Ingredients
2 to 3 cups cherry and/or pear tomatoes, sliced in half
1 cup chopped cucumber, peeled and seeded if needed
1/3 cup crumbled feta cheese
1 tablespoon mint leaves, thinly sliced
1 teaspoon fresh oregano, chopped
1 tablespoon lemon juice
2 tablespoons shallots or green onions, finely chopped
2 teaspoons extra virgin olive oil
Coarse salt and freshly ground black pepper to taste
Instructions
Slice the cherry tomatoes in half and chop the cucumber into bite-size pieces.
Add the tomatoes, cucumber, crumbled feta, mint, oregano, and shallots into a large bowl.
Drizzle lemon juice and olive oil over the ingredients.
Season with salt and pepper to taste.
Gently toss all ingredients to combine without breaking up the feta.
Let the salad rest for 5 minutes before serving to allow flavors to meld.
