Ingredients

2 to 3 cups cherry and/or pear tomatoes, sliced in half

1/3 cup crumbled feta cheese

1 tablespoon mint leaves, thinly sliced

1 teaspoon fresh oregano, chopped

1 tablespoon lemon juice

2 tablespoons shallots or green onions, finely chopped

2 teaspoons extra virgin olive oil

Coarse salt and freshly ground black pepper to taste


Instructions

Slice the cherry tomatoes in half and chop the cucumber into bite-size pieces.

Add the tomatoes, cucumber, crumbled feta, mint, oregano, and shallots into a large bowl.

Drizzle lemon juice and olive oil over the ingredients.

Season with salt and pepper to taste.
