Sweet Potato Egg Casserole is a hearty, nutritious breakfast or brunch dish made with eggs, sweet potatoes, turkey sausage, and vegetables. Easy to prepare and packed with flavor, perfect for family meals or meal prep.
Ingredients
2 tablespoons avocado oil
1/2 large yellow onion, chopped
1 green bell pepper, chopped
5 cups cubed sweet potatoes
3 garlic cloves
1 pound turkey sausage
10 eggs
1/2 cup milk (plant-based optional)
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup grated mozzarella cheese
Instructions
Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
Heat 1 tablespoon avocado oil in a skillet over medium heat. Sauté chopped onion, bell pepper, and garlic until softened, about 5 minutes.
Add turkey sausage to the skillet and cook until browned, breaking into small pieces. Combine with vegetables.
Steam or lightly boil sweet potatoes until tender. Drain well.
In a large bowl, whisk together eggs, milk, thyme, salt, and pepper.
Gently fold sweet potatoes, sausage, and vegetables into the egg mixture. Pour into prepared baking dish.
Sprinkle grated mozzarella evenly on top.
Bake for 35–40 minutes until eggs are set and the top is golden.
Notes
Sweet potato egg casserole can be made ahead and refrigerated overnight.
Use fresh herbs for added flavor.
Broil for 2-3 minutes at the end for a golden top.
