Description
This sweet Hawaiian crockpot chicken is a tropical twist on classic comfort food—made with juicy chicken, pineapple, and a tangy-sweet sauce that’s perfect over rice or in lettuce wraps.
Ingredients
½ pound boneless skinless chicken breasts, cubed
2 tablespoons soy sauce or tamari for gluten-free
1 teaspoon tomato paste
1 teaspoon Worcestershire sauce
¼ teaspoon garlic powder
½ teaspoon brown sugar
Black pepper to taste
1 red bell pepper, diced
8 ounces pineapple chunks with juice
Scallions for garnish (optional)
Rice for serving (optional)
Instructions
Add soy sauce, tomato paste, Worcestershire sauce, garlic powder, brown sugar, and black pepper to your slow cooker. Stir to combine.
Add diced chicken, red bell pepper, and the can of pineapple chunks with juice. Stir gently to coat everything in the sauce.
Cover and cook on low for 4–6 hours, or high for 2–3 hours until the chicken is fully cooked.
Thirty minutes before serving, taste and adjust seasoning. Add more soy sauce or brown sugar if desired.
If you want to thicken the sauce, stir in a slurry of 1 tbsp cornstarch + 1 tbsp water and let it simmer uncovered.
Serve over rice, garnish with scallions if using, and enjoy!
Notes
To reduce sodium, use low-sodium soy sauce and rinse pineapple before adding.
For a low-carb version, serve with cauliflower rice or in lettuce wraps.
Add red pepper flakes for heat or fresh ginger for brightness.
