Strawberry Sugar Cookie Cups are soft, chewy sugar cookies with a sweet strawberry jam center and pink buttercream frosting. Perfect for parties or cozy afternoons, these cookies are easy to bake and fun to decorate.
Ingredients
Cookies:
1 ½ cups all-purpose flour
½ tsp baking powder
¼ tsp salt
½ cup unsalted butter, softened
¾ cup granulated sugar
1 large egg
1 tsp vanilla extract
Filling & Topping:
½ cup strawberry jam
1 cup pink buttercream frosting
Heart and round sprinkles for decoration
Optional:
Dairy-free butter for a dairy-free version
Gluten-free flour to make the cookies gluten-free
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Whisk together flour, baking powder, and salt in a medium bowl.
Cream the butter and sugar until light and fluffy.
Add egg and vanilla; mix until combined.
Gradually fold in dry ingredients until just combined.
Roll dough into 1-inch balls and place 2 inches apart on the baking sheet.
Press a small well into the center of each dough ball.
Bake for 10–12 minutes, until edges are lightly golden.
Cool cookies on the baking sheet for 3–5 minutes, then transfer to a wire rack.
Fill each indentation with strawberry jam, pipe or spread pink buttercream, and top with sprinkles.
Notes
Chill dough if sticky for easier shaping.
Do not overmix the dough to keep cookies soft.
Ensure cookies are completely cooled before frosting.
Store in an airtight container for up to 3 days or freeze for longer storage.
