  • 40 grams butter, cubed

  • ⅔ cup cream

  • 35 grams parmesan, finely grated

  • 1 teaspoon lemon juice (or 2 teaspoons if you like)

  • Extra parmesan to serve

  • Pasta of your choice (see notes)

Instructions:

  1. Crush the saffron threads gently and soak them in ¼ cup boiling water for 10–15 minutes to bloom.

  2. Heat olive oil in a pan and sauté the finely diced garlic until fragrant and soft.

  3. Add the white wine to deglaze the pan, then pour in the bloomed saffron liquid.

  4. Stir in the butter cubes and let them melt, creating a smooth sauce base.

  5. Pour in the cream and simmer gently, allowing the sauce to thicken and saffron flavor to infuse.

  6. Mix in the grated parmesan and lemon juice, stirring until smooth and well combined.

  7. Cook your chosen pasta according to package instructions, then toss it into the sauce to coat thoroughly.

  8. Serve immediately, garnished with extra parmesan and a lemon wedge if desired.
