Ingredients
1 ½ cups all-purpose flour
2 cups old-fashioned rolled oats
1 tsp baking soda

1 tsp ground cinnamon
½ tsp nutmeg
½ cup unsalted butter, softened
1 cup brown sugar
½ cup granulated sugar
1 cup pumpkin puree
1 large egg
1 tsp vanilla extract
Maple Frosting:
2 cups powdered sugar
3 tbsp pure maple syrup
1–2 tbsp milk or cream
Instructions
Preheat oven to 350°F and line baking sheets with parchment paper.
In a bowl, whisk together flour, oats, baking soda, salt, cinnamon, and nutmeg.
In another bowl, cream butter and sugars until fluffy. Add pumpkin, egg, and vanilla; mix until combined.
Fold dry ingredients into wet ingredients until just combined.
Drop dough onto prepared sheets, spacing each cookie about 2 inches apart.
Bake 12–14 minutes until edges are firm and centers are soft.
Let cookies cool completely.
For frosting, whisk powdered sugar, maple syrup, and milk until smooth. Spread or drizzle over cooled cookies.
