  • 1 tsp ground cinnamon

  • ½ tsp ground nutmeg

  • ½ cup unsalted butter, softened

  • ½ cup maple syrup

  • ½ cup granulated sugar

  • ¼ cup packed brown sugar

  • 1 large egg

  • ½ cup pure pumpkin puree

  • 1 tsp vanilla extract

  • Optional: ½ cup chopped walnuts, pecans, or chocolate chips


Instructions

 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

  2. Whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.

  3. In a large bowl, beat butter, maple syrup, granulated sugar, and brown sugar until light and creamy.

  4. Mix in the egg, pumpkin puree, and vanilla extract until smooth and well combined.

  5. Fold dry ingredients into wet mixture until just combined. Stir in optional nuts or chocolate chips.

  6. Scoop 2-tablespoon portions onto prepared baking sheets, spacing 2 inches apart.

  7. Bake 12–15 minutes, until edges are lightly golden and centers are set.

  8. Cool on baking sheet 5 minutes, then transfer to wire racks.

Notes

Use pure pumpkin puree, not pumpkin pie filling.,

Chill dough 20–30 minutes if too sticky.,
