Description
This protein-packed hot honey beef bowl features roasted sweet potatoes, lean taco-seasoned beef, creamy cottage cheese, fresh avocado, and a spicy drizzle of hot honey—perfect for a satisfying and flavorful meal.
Ingredients
2 medium sweet potatoes, diced
1 lb 93/7 lean ground beef
2 tbsp tomato paste
1 tbsp taco seasoning (homemade or store-bought)
1 avocado, sliced
1/2 cup 2% low fat cottage cheese
1 tbsp hot honey (such as Zab’s or Mike’s)
Salt, pepper, and cinnamon to taste

Instructions
Preheat oven to 425°F and line a baking sheet with parchment paper.
Add diced sweet potatoes to the sheet, spray lightly with cooking spray, and season with salt, pepper, and a pinch of cinnamon.
Roast for 30 minutes, flipping halfway through and seasoning again.
While sweet potatoes roast, heat a skillet over medium-high heat.
Add the ground beef and cook for about 5 minutes, breaking it apart as it browns.
Drain any excess liquid, then stir in tomato paste, taco seasoning, and a splash of water.
Cook for another 1–2 minutes, stirring to coat the beef evenly.
Remove from heat and set aside.
Assemble bowls by layering sweet potatoes, taco beef, cottage cheese, and avocado slices.
Drizzle with hot honey and serve immediately.
Notes
Use full-fat cottage cheese for a creamier texture.
Add chopped cilantro or green onions for a fresh finish.
Swap sweet potatoes for roasted butternut squash if preferred.
