Halloween Vampire Bite Cupcakes are chocolate cupcakes filled with raspberry “blood” and topped with creamy cream cheese frosting, perfect for spooky celebrations.
Ingredients
Cupcakes:
1 ¾ cups cake flour
1 cup granulated sugar
¼ cup Dutch-process cocoa powder
¾ teaspoon baking soda
½ teaspoon fine salt
½ cup buttermilk
½ cup vegetable oil
½ cup sour cream
1 tablespoon red food coloring, plus a drop for filling
2 teaspoons cider vinegar
1 teaspoon pure vanilla extract
1 large egg
1 three-ounce semisweet chocolate bar
1 teaspoon coconut oil
1 cup raspberry jam
Cream Cheese Frosting:
8 ounces cream cheese
6 tablespoons unsalted butter
1 cup confectioners’ sugar
½ teaspoon pure vanilla extract
Instructions
Preheat oven to 350°F. Line a 12-cup muffin tin with liners.
Whisk together dry ingredients: flour, sugar, cocoa, baking soda, and salt.
Mix buttermilk, oil, sour cream, food coloring, vinegar, vanilla, and egg. Combine with dry ingredients.
Melt chocolate with coconut oil and stir into batter.
Divide batter into liners and bake 18–20 minutes, or until a toothpick comes out with a few crumbs.
Cool cupcakes, then scoop out a small center.
Fill each cupcake with raspberry jam for the “vampire bite.”
Beat cream cheese, butter, sugar, and vanilla until fluffy. Frost cupcakes.
Drizzle leftover jam mixed with a drop of food coloring over frosting for a blood effect.

Use thick jam to prevent leaking.
Ensure ingredients like egg and sour cream are at room temperature.
A crumb coat helps achieve clean frosting layers.
Mini cupcakes can be made for smaller servings.
