Ingredients
Cookies:
1 cup butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 teaspoon strawberry extract
2 ¾ cups all-purpose flour
1 teaspoon baking soda
½ cup fresh strawberries, chopped and dried
Cream Cheese Filling:
¾ cup cream cheese, room temperature
¼ cup powdered sugar
Instructions
Prepare the Cream Cheese Filling: Beat cream cheese and powdered sugar until smooth. Scoop teaspoon-sized balls onto a parchment-lined tray and freeze for at least 1 hour.
Make the Cookie Dough: Cream butter and sugar until fluffy. Add eggs, vanilla, and strawberry extract. Mix in flour and baking soda gradually, then fold in chopped strawberries.
Assemble the Cookies: Preheat oven to 350°F (175°C). Flatten tablespoon-sized dough portions, place frozen cream cheese ball in the center, and wrap dough around it. Roll into smooth balls and place on a parchment-lined baking sheet.
Bake: Bake 10–12 minutes until edges are lightly golden. Cool 5 minutes on baking sheet, then transfer to a wire rack.
Notes
Freeze cream cheese filling before assembling to prevent leakage.
Pat strawberries dry to avoid excess moisture.
