Ingredients
2 lbs sirloin or stew beef, cubed
1.5 lbs baby potatoes, halved
3 cups green beans, trimmed
5 tbsp unsalted butter
1 tbsp minced garlic
1 tsp onion powder
1 tsp seasoned salt
1/2 tsp black pepper
Optional: red pepper flakes, mushrooms, pearl onions
Instructions
Trim and cube the beef into bite-size pieces.
Place beef and halved potatoes in the crockpot.
In a saucepan or microwave-safe bowl, melt butter. Stir in garlic, onion powder, salt, and pepper.
Pour garlic butter mixture evenly over meat and potatoes. Toss to coat.
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
During the last 60–90 minutes, add green beans and gently stir in.
Taste and adjust seasoning if needed.
Serve warm with optional bread or rice.
Notes
For deeper flavor, sear beef in a hot skillet before adding to the slow cooker.
Green beans are best added late to retain texture.
Use sweet potatoes or mushrooms for variety.
