2 ounces (¼ cup) cream of coconut

Prepare the sugar-lime rim by mixing the zest of 1 lime, 2 tablespoons sugar, and a pinch of kosher salt. Moisten the rim of your glass with lime juice and dip into the sugar mixture. Set aside.
Gently muddle 8 fresh mint leaves in a sturdy glass to release their aroma without tearing.
Add the juice of one lime and 2 ounces of cream of coconut to the glass.
Fill the glass with ice and stir well to combine and chill.
Top off the glass with soda water, stir lightly, and garnish with a mint sprig and lime wheel.
