Ingredients
2 sticks unsalted butter, divided
3 pounds potatoes (half Yukon Gold, half Russet)
8 large cloves garlic, minced
Fine sea salt and freshly-ground black pepper
1 cup whole milk, warmed
1 cup freshly-grated Parmesan cheese
Toppings: chopped fresh chives or green onions, freshly-cracked black pepper
Instructions
Peel and cut potatoes into evenly sized chunks.
Boil potatoes in salted water until fork-tender, about 15-20 minutes.
In a skillet over medium heat, melt 1 stick of butter until golden brown, add minced garlic and cook 1-2 minutes.
Mash cooked potatoes with browned butter, remaining butter, and warmed milk until smooth.
Stir in Parmesan cheese and season with salt and pepper.
Top with chives or green onions and freshly cracked black pepper before serving.
Notes
Use a potato ricer for fluffier potatoes.
Can prepare a day ahead and reheat gently.
Add roasted garlic or herbs for extra flavor.
