Ingredients
Cookies:
1 cup unsalted butter, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 ¾ cups all-purpose flour
1 cup finely ground almonds or almond flour
1/4 teaspoon salt
1 jar blueberry jam or preserves
1/2 cup additional powdered sugar for coating
Instructions
Preheat Oven: Set oven to 350°F (175°C) and line a baking sheet with parchment paper.
Cream Butter and Sugar: Beat butter and ½ cup powdered sugar until light and fluffy, then mix in vanilla.
Combine Dry Ingredients: Whisk flour, ground almonds, and salt, then gradually fold into butter mixture to form soft dough.
Shape Cookies: Flatten 1 tablespoon of dough, place ½ teaspoon blueberry jam in the center, fold dough over, and roll into a smooth ball.
Bake: Arrange 1 inch apart on baking sheet and bake 12-15 minutes until edges are lightly golden.
Cool and Coat: Cool on baking sheet for 5 minutes, transfer to wire rack, and roll in powdered sugar.
Notes
Chill dough 15-20 minutes before shaping to prevent spreading.
Seal jam completely to avoid leakage.
Roll in powdered sugar twice for a thicker coating.
Store cooled cookies in an airtight container for up to 5 days, or freeze for up to 3 months.
